This next-generation snack is the result of a collaboration between "Žemaitijos Pieno" masters and John Ludy, President of APITCA (The American Producers of Italian Type Cheese Association). As an unparalleled cheese expert, John Ludy inherited his cheesemaking knowledge from his father and has dedicated his life to the art of cheese. In honor of his contribution to this new snack, it has been named "Jon Chedar."
"Jon Chedar" cheddar bites are made using a low second-heating temperature and an active lactic acid fermentation process called cheddaring. During this process, a high amount of lactic acid separates calcium from the cheese mass, altering its structure to become compact and uniform.
The cheddared cheese blocks are then cut into irregularly shaped bites using a special machine. These bites are carefully seasoned with selected spices that enhance, rather than overpower, the rich cheddar aroma.
